I made some of those on my cast iron griddle that I put on my Kamado Joe last week for the first time. They were awesome.SexualChocolate said:

Got some skin on chicken breasts that I brined overnight in kosher salt, black pepper and texas pete dust. They're drying on a rack now, before going over the charcoal. Gonna throw a small amount of sugar maple over the coals for a little different twist. Timing it so they will be ready by game time.
