About halfway through smoking 3-2-1 ribs on the Weber Kettle today using the snake method. Got the TV on the back deck for the game. Life is good.

The Wilbur's owner's son did a barbecue pop-up shop in our neighborhood that I fortuitously walked up on on a dog walk.

Picked up some Que, brisket, Brunswick stew, slaw, and banana pudding.

Was not the plan for tonight but had to jump at the opportunity. Dinner is covered!

Off Oberlin in Raleigh...it was completely random.

The son evidently moved to Raleigh and commutes to Goldsboro several times a week. I told him I'd appreciate him making the pop-up shop an every Saturday event, ha!

Instead of Chili/Wings I stumbled upon a Taco Soup Receipt. Turned out pretty good.
I asked a ref if he could give me a technical foul for thinking bad things about him. He said, of course not. I said, well, I think you stink. And he gave me a technical. You can't trust em.

Surf and turf for me. Steaks cut up from a single flank (I think that was the cut, someone else did the slicing) and salmon with lemon-dill olive oil, Chardonnay and salmon rub in foil over Sam's Club lump charcoal.

Ive done the whole thing both on the grill and in the oven. After the covered cook, I usually throw the chuck on a plate for 20ish minutes and hand shred it. I dont like giant chunks of beef fat, so if I can pick those off, I usually do. Either throw it back on the grill or the oven until most of the liquid is gone. Leftovers freeze really good

Got half a bushel of stump sounders getting ready to land on my deck in half an hour. Oyster knives are out, music is playing, baseball game is on, and the beer is cold.

Correction, and update: thought he'd run into some stump sound oysters but my uncle got these from Carolina Gold out of Beaufort. Small with great flavor, really salty. Roasted these instead of steaming them. Turned out great!

That beer/vinegar brine sounds interestinggives it a nice tangy flavor, I bet. What kind of wood are you using for the smoke? I've had great results with applewood on pork loin.

Hard to beat chili and cornbread. One of my all-time faves for sure.

Cornbread is a whole thing that may bring the Water Cooler to blows if we hash it out preferences; may be worse than debating barbecue sauces.

My personal preference is no corn kernels or onion, with a fair amount of sweetness to pair with savory dishes (usually do a mix of brown and granulated sugar (sometimes even with a splash of maple syrup), in a cast iron skillet.

For the spaghetti sauce, especially if we're being lazy it's hard to beat doctored RAO sauce as the base.

To the RAO we add a 66/33 mix of ground beef and ground pork sauteed with fresh garlic and onions, fresh parm and red wine. Damn good.
