Our group enjoys a good 1x/season tailgate breakfast and Ive recently found our new "tailgating bacon" which I'll post separately if anyone's interested. That said, once a season is definitely our limit...years where we have 3-4 noon kicks makes it harder and definitely less enjoyable.

Bacon is the only complexity; can do it, but it's very slow and eats up too much griddle area and kicks off a lot of grease that you have to juggle. We will often do sausage instead, or I'll do the bacon at home beforehand and heat it on the top just prior to serving.


That sounds really good. I wish our group was all over this.

And we've done Canadian bacon from time to time and it def cuts down on grease management but it's just not as fatty and delicious.

Found this at Harris Teeter, not the cheapest but not the priciest either and if you like smokey flavored bacon...this is *chefs kiss*

Chilaquiles:

Bag of tortilla chips (thick ones work best IMO)
Red el pato enchilada sauce (have a can of green too but obviously gonna use red tomorrow...)
Ground chorizo to sprinkle on top
Queso Fresco
Gonna fry two eggs and layer that on top

If I move back to NC and have season tickets I have to imagine this would be a morning tailgate staple on a flat top grill.

Grab some biscuits on the ride in. Get there early and get it going. Take the kids to WOC and back to fire up the grill for some pork chop sandwiches. Nice and easy. Go Pack

Sounds good. We are doing Bojangles biscuits and grabbing something inside. Like you said, sometimes easy is the way to go.
