I had a beautiful pork butt ready to go...and my f*&^ing RecTeq won't stay lit. This is what I get for ditching charcoal in exchange for ease of use.

I won't call it BBQ, but it's still decent pulled pork w/ ENC-style sauce.

My kids aren't exactly connoisseurs, so I am the only disappointed one and it's still better than Smithfield's

Game on at 4pm here, so fairly limited options when working up until then. Going to whip up some nachos at half time.

- pound of chorizo
- black beans
- peppers: red, poblano, fresh jalapeno, fresno
- white onion
- cheese (usually try to mix cheddar and pepper jack but ran out of pepper jack)
- creamy jalapeno salsa
- standard red salsa
- avo

Get a Kamado of some sort, and a temp control fan if you want to set it and forget it!

If my in-laws are around or I am trying to impress someone I'll do it all from scratch, but 90% of the time it's George's and a store bought rub and slaw for the convenience.

I had a slightly modified Weber bullet and a temp control fan that worked flawlessly. I sold them dirt cheap just to clear space on the patio after getting the pellet grill.

I should have bought a low end Traeger and kept the Weber before jumping in "whole hog" with the RecTeq, but damn they had REALLY good marketing during COVID.

I know several people with RecTeq's and they all like them a lot. You just pulled a short straw today. Hope you find a good workaround!

I'll get killed for this (probably rightfully) but only managing to do a boston butt in the crock pot today and taking out for finishing touches at the tailgate. Tonight was rough with work schedule and kids to go all out for this one. Still will be damn tasty but would have prefered other options. hoping to get out there by 4:30 or so and enjoy the new spot for a few hours. Go Pack!

Since it's a noon tailgate…..we're doing our annual breakfast tailgate. (Plus, busy week as wife and I have to take our 1 child to start his freshman year Wednesday and Thursday. So I'm being a little lazy with this weeks menu). That said, aside from typical breakfast menu. We are asking everyone to bring their favorite cereal and adding a cereal buffet this year

We tried cooking breakfast one year. Had some deer sausage and eggs. We just wimped out in future years and everyone stopped and got their own Bojangles order. Someone would always bring donuts from Krispy Kreme

Breakfast tailgates just don't do it for our crowd. Probably grab a biscuit on the way to the stadium and fire up the charcoal around 10:15 or so for some burgers or something easy to eat before the game.

We get back from North Topsail Saturday around 12:30...so, we'll throw something on the grill and have it ready by halftime...what that will be TBD.

Well, last week, we did a "shrimp boil" on the griddle. It turned out great and will definitely be doing that again but maybe with less food.

This week, for the early kick, we are probably doing breakfast burritos with hash browns and also doing smashed cinnamon rolls.

Dang, our crew rallies around the novelty of a breakfast tailgate. Probably because the kids like the tasty sweet treats the adults like the bloody Mary's and bloody beers and mimosas.

Taking the two-burner camping stove and griddle allows for an easy cook of eggs/pancake/French toast/breakfast meat.

Bacon is the only complexity; can do it, but it's very slow and eats up too much griddle area and kicks off a lot of grease that you have to juggle. We will often do sausage instead, or I'll do the bacon at home beforehand and heat it on the top just prior to serving.

I have gotten to where I cut the bacon up and cook it that way. Still have the grease which can be a challenge but it allows you have a smaller space to where you are cooking the bacon while doing other things.
