Hard to beat chili and cornbread. One of my all-time faves for sure.

Cornbread is a whole thing that may bring the Water Cooler to blows if we hash it out preferences; may be worse than debating barbecue sauces.

My personal preference is no corn kernels or onion, with a fair amount of sweetness to pair with savory dishes (usually do a mix of brown and granulated sugar (sometimes even with a splash of maple syrup), in a cast iron skillet.

For the spaghetti sauce, especially if we're being lazy it's hard to beat doctored RAO sauce as the base.

To the RAO we add a 66/33 mix of ground beef and ground pork sauteed with fresh garlic and onions, fresh parm and red wine. Damn good.
I can't do onions either. I need to give RAO a shot. We do Victoria's pasta sauce, just add sausage.

I dont know how yall cant do onions, they are in almost everything I make.

Doing a lot of meal prep this weekend. Chicken with rice and broccoli, breakfast casserole, and red beans and rice

I've just never been able to eat them. Meal prep sounds good. We are in the planning stage of dinner and the rest of the weekend.

Thinking about grilling some chicken quarters today. Anyone else get out and fire up the grill and or smoker?

Nice! Saucing the chicken or just some oil/salt/pepper? Any good sides?

We also took advantage of the great grilling weather and did burgers for the kids and their friends last night and Faroe Island salmon for us. Air fried waffle fries with the burgers and a Bibb salad with red onions and tomatoes and homemade bacon bits and lots of freshly grated parm to go with the salmon.

Food and weather were both great!

That sounds good, I love waffle fries in the air frier. I haven't decided on the wet or dry, I went to 3 stores and none had quarters. Ended up with some decent size breast. Sides, will be butter beans and mac and cheese. For whatever reason, chicken quarters are to find in these parts.

Man I haven't had good butter beans in a minute, that and mac and cheese sounds great!

How do you do your mac? Several different cheeses? Add a little milk? Broil it after to crisp the top or nah?

I'll throw whatever cheeses we have in there (not blue) but a little parm in there for depth of flavor is great.

The wife does the mac and cheese, so I'm not sure how she does it, but I do know that there is more than one cheese in it. The top has a little crisp but not a ton. Butter beans are a go to for me.

Does that apply to grills? I fired up the Weber kettle last night. Saw the warning but didn't pay it any mind.

I slightly screwed up wings last night (thanks to post yard work beers), but given the cold, today's cook is indoors. Doing jalapeno chicken and rice

That chicken sounds good. And yes, drinks while grilling can lead to some interesting finishes. lol
